Chef Gianfranco Minuz continues Lago’s whole-animal series with a 5-course “gill-to-tail” dinner featuring Albacore Tuna. Line caught by Captain Josh Brown of the Fishing Vessel “The Intrepid” off the Southern California coastline, Albacore Tuna is the only tuna that can be marketed as the “white meat tuna” in the US. It delivers a more mild flavor than it’s counterpart Yellowfin or Ahi Tuna.
