Ces derni\u00e8res ann\u00e9es, Liwei est devenu c\u00e9l\u00e8bre au sein de la communaut\u00e9 culinaire pour ses magnifiques poissons vieillis \u00e0 sec, une technique que l'on trouve plus commun\u00e9ment au Japon et qui remonte \u00e0 plusieurs si\u00e8cles. Il s'agit d'une v\u00e9ritable forme d'art qui conf\u00e8re au poisson une tendret\u00e9, une texture et une saveur uniques.
