In den letzten Jahren wurde Liwei in der kulinarischen Gemeinschaft f\u00fcr seinen wundersch\u00f6nen, trocken gereiften Fisch gefeiert - eine Technik, die eher in Japan zu finden ist und Jahrhunderte zur\u00fcckreicht. Es handelt sich dabei um eine wahre Kunstform, die dem Fisch eine einzigartige Zartheit, Textur und Geschmack verleiht.
